Eating Vegetables…how to:

You gotta be clever here: Call it fun food. This isn’t punishment. Don’t say, ” sit there and eat your vegetables or else.” Also don’t say veggies are good for you in a tone of voice that infers ” they don’t taste good.” Just serve them delicious food that veggies are a part of .

New stats from Center for Disease Control say only 1 in 10 adults eat enough fruits and veggies, so let’s start early making veggies a normal part of a child’s diet. Adults in adulthood go back to what was “normal” to eat in their childhood.

Grate veggies into spaghetti sauce and cook, so not seen…parmesan cheese over top.

Grated veggies hiding in a meatloaf…beef or turkey

Carrot and ginger soup

Zucchini Fritters on Pinterest

Veggies in stuffing.

Baby peas or baby lima beans with butter

Chopped salads (premade in a bag seems OK)

Cole Slaw

Creamed spinach…stemless spinach, chopped garlic/nutmeg/S&P/sm amt. cream

Persian baby/cocktail cucumbers in oil and vinegar that taste great…very soft

Guacamole on corn/potato chips

Quickly cooked cauliflower or broccoli with cheese sauce…paprika on top

Corn on the cob

Veggie pancakes with chick pea flour

Hash brown potatoes (grated from previously baked ones) with chopped onion and a few colorful chopped bell peppers.

Barbecued veggies from the grill

Roasted veggies in oven with olive oil

Re-fried beans with no additives. Trader Joes has a great canned black bean one. Will yours eat mild salsa? Spanish rice?

Tacos and hamburgers with tomatoes, onion (fried or a slice) and shaved lettuce

Yam French Fries baked in oven…homemade, of course…same for potatoes…hi temp.

Bean soup (dried white  beans, water, carrots, onion, cauliflower, garlic, thyme, S&P blended in pot with hand-held blender)

Tomato soup (sm. can of tomato paste, water, garlic salt or powder, dried basil, S&P, a tsp. of sugar, a tad of cream just at the end, but don’t boil as it will separate)

Vegetable Soup…veggies in beef or chic broth herbs/blend with hand blender

Spilt Pea Soup with carrots and onions/thyme/ S&P

Spiralizer veggies (broccoli stems, carrots) pasta with sauces

Fried Rice with chopped veggies

Veggies on pizza

Tempura?…crunchy and delicious. Chinese food?

Quesadilla with cooked chicken breast (rotisserie chicken from Costco?,) sliced tomatoes, green onions, cilantro, and cheese.

Cous Cous salad with cherry tomatoes, cucumbers, mint, green onions…dressing

Here, eat a tree as you offer a small section of cooked broccoli with a stem.

Add green veggie powder to a recipe…meatloaf etc.?

Have an organic garden out back with lots of fast growing veggies that they will pick and want to eat.

Detox Bath

If a child is emotionally acting out more than usual, put them in a vinegar bath…2 cups of apple cider vinegar in their usual bath water. It balances out their nervous system, and calms them right down. If needed, do this any time during the day, and esp. wonderful at night before bed. This is also very useful if they have colds.

I used to lug in gallons of apple cider vinegar for this purpose, and it made a huge difference in all of our lives. With all of the horrible things children eat, this helps though eliminating food additives, food coloring, and all of the chemicals you can’t read on the ingredients label especially added sugar, is the best solution.

Make all of their food from scratch, so that you know exactly what they are eating. Make ahead to freeze for your convenience. Create a master list of easy and highly nutritious breakfast, lunch, and dinner ideas on google docs for your quick reference. Their bodies are forming now, and each bite counts. I added wheat germ to all pancakes, cookies, and muffin recipes. Also use “pastry” whole wheat flour grind which isn’t as heavy as regular whole wheat flour. Bob’s Red Mill has a wonderful 5 lb. EXCITOTOXINS

Excitotoxins as described in Dr. Blaylock’s excellent book of the same name are in most processed foods and fast foods, and simply must be avoided especially when feeding children. These are additives that go beyond the actual foods. Read the labels and you will see them…chemicals of all sorts. Dr.Blaylock describes them in detail along with the results that occur.

Preparing your own food with non chemicalized food is the way to avoid these unwarranted additives using whole food, organic food when possible, meats and fish that are all natural….Sprouts Farmer’s Markets have this type of meat. Costco also has a good variety of all food that is organic and natural, and so does Trader Joes….Just read the labels.

Reading ability in children is affected when a child’s  focus and concentration are influenced and compromised by their eating added chemical additives as described above in Dr. Blaylock’s book.

This is a big deal.

HEALTH AND READING

There can be certain health issues that don’t allow a child to focus properly, and reading ability can be one of them. But thankfully there are easy ways to improve this issue. But first, you must understand that this could possibly exist. My son had these characteristics below, and I became a warrior mother in solving them. I am not a doctor, but his pediatrician and his teacher couldn’t believe the positive changes and improvements that they observed in him after this was corrected. No, it wasn’t just about deleting sugar, food additives or food coloring in his diet though these are very important too. There is more.

First let me describe some of the symptoms that may ring true with your child who is having difficulty focusing on a task such as reading.

HARD TO COMMUNICATE, ENGAGE OR HOLD A CONVERSATION WITH THEM

JUMPY PHYSICAL MOVEMENTS…BODY MOVEMENTS GOING EVERY WHICH WAY

OVER REACTS TO STIMULATION’…EXPLOSIVE OVER REACTIONS IN GENERAL

A.D.D. SYMPTOMS START TO LOOK FAMILIAR

CIRCLES UNDER EYES

PALE SKIN COLOR

NOT PEACEFUL

HARD TO PAY ATTENTION

LIVE IN THEIR OWN WORLD

NARROW FOOD LIKES

Reading is often a casualty if some of the above is true with your child. I would ask you to consider…seriously consider FOOD SENSITIVITY which is a  food that doesn’t agree with a child. It is not an allergy, but a sensitivity.  Symptoms like some of the above can be corrected. It doesn’t matter how much the food is proclaimed as healthy or even if it considered a superfood. If it doesn’t agree with your child, then it must be identified and eliminated. I would never consider medicating my child with a pharmaceutical like Ritalin or anything similar…..too many side effects!

Our basic American diet consists of beef, wheat, dairy/milk, eggs, corn and soy. Start your consideration about your child’s sensitivities with these foods.  Watch how they act after eating them. Are any of the symptoms like the ones above more intense///more noticeable? If so, you are the right track now.

All processed foods, added chemicals, and fast foods are also on this list and must be subject to scrutiny. Processed food is off limits…just whole organic if possible, food is THE WAY TO GO. There is even “processed” natural foods using lentils, edamame, beans, quinoa, rice, almonds, etc etc…some work and some don’t….You have to be very aware of this cause and effect to decide which food is correct as each child is different. What a child eats influences his or her behavior and focus, and a parent must be very aware of this connection. 

My grandson cannot eat wheat, and my grand daughter cannot eat eggs…..all very common. My children had longer lists.

If it is too hard to determine the offending food by yourself, go to a NATUROPATH who will use a MRT LEAP TEST TO DETERMINE THE OFFENDING FOOD which you will eliminate for awhile. You can reintroduce in a few months to see if it is OK….You just experiment….
